Senior Sushi Chef
Sr. Sushi Chef is the senior-in-command in a professional kitchen, assisting the executive chef. The Sr. Sushi chef is responsible for the day-to-day culinary operations in a professional kitchen. Functions include menu creation, food purchasing, and maintenance of quality standards. A senior Sushi chef assumes the role of preparing a variety of high-quality Sushi Dishes cost controlling and maintaining food costs and supervising storage, stocking, and sanitation procedures
Responsibilities:
- Expertly cutting, slicing, and filleting different types of fish.
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef
when quality is sub-standard - Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation,
and food safety - Maintaining a clean work environment in order to prevent food contamination
- Regularly taking inventory of food supplies and other products
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Communicating with wait staff to ensure that special requests and food allergy considerations are met
- Training new employees and apprenticing chefs
- Communicating with food and materials vendors to manage inventory needs
- Any other task assigned by your manager or supervisor
Requirements:
- Must have 4-5 years of Sr. Sushi Chef/Sous chef experience with a fine dining Japanese Restaurant
- Must have Senior Secondary/Graduate degree
- Must have good computer skills, and must be able to lead a team effectively
