Japanese Sushi Chef Responsibilities:
- Prepare sushi rice, slicing and filleting various kinds of fish
- Preparing a rich sushi menu with various main ingredients and raw fish
- Ensure food quality and the desired kitchen standards are constantly met
- Support the Executive Chef in day-to-day operations including ordering and running the kitchen
- Assist in maintaining the kitchen upkeep and controlling food costs
- Report any problems with kitchen equipment
- Maintain a clean and safe workspace
Japanese Sushi Chef Requirements:
- Specialized in Kaiseki cuisine with Michelin 2 or 3 stars background
- Flexibility to utilize limited ingredients as Australia has very limited ingredients compared to Singapore & Japan.
- Strong communication skills with customers during opening hours
- Strong management skills in terms of managing the kitchen and staff
- Plan and direct food preparation and culinary activities
- Estimate food requirements and food/labor costs
- Arrange for equipment purchases and repairs
- Rectify arising problems or complaints
- Comply with nutrition and sanitation regulations and safety
