About the Opportunity:

A new Nikkei handroll bar is preparing to open in Jeddah, offering an intimate, energetic dining experience built around exceptional product, engaging hospitality, and fast-paced bar service.

With approximately 45 seats, the concept is intentionally small and highly interactive. Guests will experience the food and service up close, creating an environment where the quality of the product, precision of execution, energy of the team, and attention to detail are critical.

We are seeking an experienced Assistant General Manager to join the opening team and work closely with the General Manager in building and operating this exciting new concept.

The Role:

The AGM will be a key operational leader within the restaurant, responsible for ensuring outstanding day-to-day service while supporting the GM across people, operations, guest experience, and commercial performance.

This is a hands-on floor leadership role. The successful candidate should be comfortable leading from the front, managing a fast-paced service, interacting directly with guests, and maintaining high standards even when the restaurant is under pressure.

Key Responsibilities:

Opening & Operations

• Support the GM throughout the pre-opening and launch period.
• Assist with developing and implementing SOPs and service standards.
• Participate in recruitment, onboarding, training, and team development.
• Help prepare the restaurant for soft opening and launch.
• Lead daily operations and service in partnership with the GM.
• Act as Manager on Duty when required.
• Ensure consistent execution of service standards throughout every shift.

Service & Guest Experience

• Lead the floor during busy services and maintain strong service flow.
• Ensure guests receive warm, knowledgeable, and highly attentive hospitality.
• Create energy and engagement within the bar environment.
• Monitor service timing, communication, presentation, and guest satisfaction.
• Handle guest feedback and resolve issues quickly and professionally.
• Build relationships with regular guests and VIPs.

Team Leadership

• Coach and develop front-of-house team members.
• Set clear expectations around service, grooming, product knowledge, and hospitality.
• Conduct pre-shift briefings and post-service reviews.
• Support scheduling, performance management, and team communication.
• Create a positive and accountable team culture.
• Lead by example during every service.

Operational Controls

• Support inventory, stock, ordering, and waste-control procedures.
• Monitor restaurant cleanliness, maintenance, and operational readiness.
• Ensure health, safety, hygiene, and company procedures are followed.
• Support labour and cost-control initiatives.
• Identify operational issues and implement practical solutions.

Commercial Performance

• Support the GM in achieving sales and profitability targets.
• Monitor sales, labour productivity, average spend, and other key KPIs.
• Identify opportunities to improve revenue and guest frequency.
• Ensure operational efficiency without compromising the guest experience.

Candidate Profile:

• At least 2 years’ experience in a supervisory, assistant management, or management position.
• Pre-opening experience is strongly preferred.
• Strong understanding of high-level service and guest engagement.
• Confident leading a team during busy service.
• Highly organised with strong attention to detail.
• Commercially aware and comfortable working with operational KPIs.
• Excellent English communication skills.
• Energetic, professional, positive, and highly present on the floor.
