At ZEN JAPANESE SUSHI BAR & TEPPANYAKI we are looking for an exceptional Head Sushi Chef to join our team.

ZEN is an independent restaurant business with 6 sites all around Malta.

We strive to deliver a diverse and extensive menu featuring a range of hot and cold dishes.

All of our food is made to order fresh in the kitchen daily and our stringent sourcing policy ensures that we only ever use the best quality and most authentic ingredients, so our customers can enjoy a premium dining experience each visit.

Your role as Head Sushi Chef will be to manage the day to day running of the Sushi kitchen delivering exceptional food quality and service to all our guests whilst ensuring the team are fully engaged and motivated.

Job Description:

·                     Able to prepare Omakase Menu.

·                     Expertly cutting, slicing, and filleting different types of fish.

·                     Prepare all types of sushi, including maki, nigiri and sashimi of fine-dining quality.

·                     Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes.

·                     Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.

·                     Maintaining a clean work environment in order to prevent food contamination.

·                     Regularly taking inventory of food supplies and other products.

·                     Communicating with waiting staff to ensure that special requests and food allergy considerations are met.

Job Requirements:

·                     3~5 years of proven experience at Sushi restaurant, Japanese Omakase Dining,

Fine Dining.

·                     Passion on Japanese food.

·                     Self-motivated. Responsible. Team-worker.

·                     Good time management, discipline.

·                     Valid Food and Hygiene Certification (this can also be obtained in Malta).

·                     Japanese Culinary License Certificate (調理師免許証明書).

·                     Ability to understand and converse well in English.

·                     Good communication skills and a positive attitude in customer service.

·                     The ideal candidate must be able to start in 1 month notice or less.

48hours a week with one day off

Term (length) of employment:

A 2-year contract.

Monthly salary:

2200 ~2500€, (depending on experience).
