About the Role:

The Hand-Pulled Noodle Chef will be responsible for leading all Lamian preparation and execution within the kitchen, ensuring authenticity, consistency, and exceptional quality standards. The role involves preparing dough from scratch, maintaining ideal elasticity, and performing live noodle pulling during service in an open-kitchen environment.

This position plays a key role in guest experience through culinary performance, precision, and consistency. The chef will also contribute to maintaining kitchen standards, supporting menu execution, and training team members in fundamental noodle preparation techniques.

Key Responsibilities:

  • Prepare authentic Lamian dough using traditional Chinese techniques.
  • Master dough fermentation, kneading, resting, and elasticity control.
  • Execute live hand-pulled noodle demonstrations during service.
  • Produce multiple noodle thickness variations with consistency and accuracy.
  • Maintain speed and precision during high-volume service periods.
  • Ensure uniform texture, length, and cooking quality of noodles.
  • Control dough hydration levels and adjust formulations based on environmental conditions.
  • Maintain strict hygiene, food safety, and sanitation standards.
  • Set up and manage noodle station mise en place before and during service.
  • Collaborate with culinary leadership on noodle-based menu execution and seasonal specials.
  • Assist in developing signature noodle dishes and broth pairings.
  • Train and guide kitchen staff in basic noodle preparation techniques and dough handling.
  • Ensure proper ingredient handling, storage, and quality control.
  • Monitor flour quality and recommend adjustments for optimal dough performance.
  • Maintain consistency in noodle output during peak and high-pressure service hours.
  • Adapt techniques while maintaining authenticity using available ingredients.
  • Troubleshoot dough issues such as elasticity imbalance or breakage during service.
  • Coordinate closely with soup, sauce, and wok sections for seamless dish execution.
  • Participate in live kitchen presentation and guest-facing execution moments.
  • Maintain discipline, consistency, and efficiency in production.
  • Support continuous improvement in noodle quality, speed, and presentation standards.

Candidate Requirements:

  • Minimum 5 years of relevant culinary experience.
  • Expertise in authentic regional Chinese cuisine.
  • International work exposure preferred.
  • English communication skills are mandatory.
  • Ability to train and mentor local kitchen staff.
  • Prior restaurant opening experience preferred.
  • Experience in open kitchen/live cooking concepts preferred.
