This role is designed for a highly skilled Dao Xiao Mian specialist with deep expertise in knife-cutting techniques, dough mastery, and texture precision. It demands strength, speed, and absolute control to transform simple dough into freshly shaved noodles, delivered live with consistency and visual impact in a high-end open-kitchen setting.
About the Role:
The Knife-Cut Noodle Chef will be responsible for preparing and executing authentic Dao Xiao Mian using traditional Chinese techniques. The role involves preparing dough, achieving optimal elasticity, and skillfully shaving noodles directly into boiling water with precision and consistency during service.
This position plays a key role in delivering a dynamic guest experience through live culinary performance. The chef will also support kitchen operations, ensure consistency in noodle quality, and contribute to maintaining high standards in a fast-paced fine dining environment.
Key Responsibilities:
- Prepare authentic Dao Xiao Mian dough using traditional Chinese methods.
- Master dough kneading, resting, hydration, and elasticity control.
- Execute knife-cut noodle preparation directly into boiling water with precision.
- Maintain consistent noodle thickness, length, and texture during service.
- Perform live noodle cutting demonstrations in an open-kitchen environment.
- Ensure speed and accuracy under high-pressure service conditions.
- Maintain strict hygiene, food safety, and sanitation standards.
- Manage noodle station mise en place and service readiness.
- Collaborate with culinary leadership on noodle-based menu execution.
- Assist in developing signature noodle dishes and broth pairings.
- Ensure consistency in dough quality and ingredient handling.
- Adjust dough texture based on environmental and flour variations.
- Troubleshoot dough and cutting consistency issues during service.
- Train kitchen staff in basic dough preparation and noodle handling techniques.
- Coordinate with soup and sauce sections for seamless dish execution.
- Maintain disciplined, organized, and efficient kitchen operations.
- Contribute to live kitchen presentation and guest engagement moments.
- Support continuous improvement in noodle quality and execution standards.
Candidate Requirements:
- Minimum 5 years of relevant culinary experience.
- Expertise in authentic regional Chinese cuisine.
- International work exposure preferred.
- English communication skills are mandatory.
- Ability to train and mentor local kitchen staff.
- Prior restaurant opening experience preferred.
- Experience in open kitchen/live cooking concepts preferred.
