About the Role

The Chef de Cuisine plays a pivotal role in driving culinary excellence and leading day-to-day kitchen operations. This position works closely with the Executive Chef to ensure exceptional food quality, creativity, and consistency while optimizing efficiency and profitability. The ideal candidate will be an inspiring leader with a passion for innovation, an eye for detail, and the ability to elevate every dining experience.

Key Responsibilities:

  • Direct and control all subordinate kitchen staff to ensure that day-to-day operational matters are handled efficiently and guest expectations are met.
  • Coordinate with outlet managers to ensure smooth restaurant operations.
  • Prepare duty rosters as directed and plan manning efficiently.
  • Monitor consistency of preparation and presentation across all food production areas to maintain required standards.
  • Liaise with purchasing and suppliers to ensure quality and cost-effectiveness of all food items.
  • Conduct periodic checks of delivery and storage areas to maintain hygiene and food quality.
  • Assist in implementing the annual promotion plan and menu change cycle.
  • Ensure an accurate and up-to-date recipe bank is maintained.
  • Contribute to menu planning using sales analysis and menu engineering techniques.
  • Maintain hygiene and cleanliness standards across all kitchen areas.
  • Control and monitor kitchen expenses.
  • Prepare and submit reports as required by supervisors.
  • Conduct regular kitchen inspections to ensure mise-en-place, procedures, maintenance, grooming, and staffing meet standards.
  • Assist in selection, training, and evaluation of kitchen staff.
  • Coach, counsel, and develop subordinates to maintain motivation and excellence.
  • Contribute to team morale and maintain effective relationships with colleagues.
  • Perform additional duties as directed by supervisors.
  • Suggest and recommend improvements to enhance overall performance.
  • Be fully conversant with health, safety, fire, and emergency procedures.
  • Maintain high personal standards of hygiene, dress, and professionalism.
  • Attend meetings and training as required.
  • Ensure all activities align with ethical standards and local law.

Performance Evaluation Criteria:

  • Quantity and nature of guest comments and complaints
  • Control of expenses and food cost percentage
  • Standards of cleanliness and hygiene
  • Staff training and development

Qualifications:

  • 5–7 years of experience in the industry with at least 2 years in a similar capacity
  • College education or equivalent certification in culinary arts or related field
  • Innovative and passionate about gastronomy; strong team player
  • Proficient in English communication
  • Excellent organizational and leadership skills
  • Ability to lead, motivate, and develop a diverse team
  • Capable of managing a demanding workload while maintaining quality
  • In-depth knowledge of kitchen operations and food preparation standards
  • Strong interpersonal skills with a collaborative approach
