Japanese Sushi Chef Responsibilities:

  • Prepare sushi rice, slicing and filleting various kinds of fish
  • Preparing a rich sushi menu with various main ingredients and raw fish
  • Ensure food quality and the desired kitchen standards are constantly met
  • Support the Executive Chef in day-to-day operations including ordering and running the kitchen
  • Assist in maintaining the kitchen upkeep and controlling food costs
  • Report any problems with kitchen equipment
  • Maintain a clean and safe workspace

Japanese Sushi Chef Requirements:

  •  Specialized in Kaiseki cuisine with Michelin 2 or 3 stars background
  • Flexibility to utilize limited ingredients as Australia has very limited ingredients compared to Singapore & Japan.
  • Strong communication skills with customers during opening hours
  • Strong management skills in terms of managing the kitchen and staff
  • Plan and direct food preparation and culinary activities 
  • Estimate food requirements and food/labor costs
  • Arrange for equipment purchases and repairs 
  • Rectify arising problems or complaints 
  • Comply with nutrition and sanitation regulations and safety
