Chef De Partie (Cold Kitchen)
As a Chef De Partie, you supervise and coordinate the production activities of the Kitchen. He/she meets with
Pastry Chef on a daily basis to discuss the food and time requirements for the day’s precautions. As a Chef de
Partie you are responsible to take care of the daily food preparation and duties assigned to meet the set standard
and qualities at all times.
Responsibilities:
- Manage kitchen with the assistance of commie/kitchen helper.
- Ensure daily production schedule is completed on time.
- Ensure the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate.
- Coordinate daily tasks with the Sushi Chef on requirements, functions, production, and last-minute events
- Responsible for receiving and cross-checking the stocks coming from central stores.
- Coordinate with catering coordinator for orders
- Coordinate with purchasing department to ensure enough materials or available for production.
Requirements:
- Must have 4-5 years of Chef De Partie COLD experience with a fine dining restaurant in UAE; preferably in a high-end Japanese restaurant
- Must have Senior Secondary/Graduate degree
- Must have good computer skills, and must be able to lead a team effectively.
